Banana-Oatmeal-Chocolate Chip Cookies


I just came across the most amazing cookie recipe. Ok so I haven't made the actual cookies yet but the dough is amazing!

Banana-Oatmeal-Chocolate Chip Cookies
Makes 16 cookies

1c oat flour (I just wiz regular oats in the blender until they make flour:)
3/4c rolled oats
1/2t baking powder
1/3t baking soda
1/2t salt
1/2c raw sugar
1/3c canola oil
1/3c soy milk
1/2t vanilla
1/2 ripe banana
1/4c walnuts
1/3c semi sweet chocolate chips

Preheat oven to 350. Combine 1st 6 ingredients. Whisk oil, soy milk, vanilla and banana in separate bowl. Add to dry ingredients and stir. Fold in chocolate chips and walnuts. Bake for 25 min or until golden brown.

I found this recipe in a health magazine and it is by a "celebrity natural-foods chef" who owns a bakery in LA. www.bethennybakes.com
She also suggested
* adding 1T ground flax seeds. I just wizzed em with the oats in the blender.
*substituting honey for sugar
*instead of adding banana, walnuts and chocolate chips try:
raisins and a pinch of cinnamon
dried blueberries with raw sugar sprinkled on top
dried cranberries and 1/2t orange extract
slivered almonds and 1/2t almond extract
